做(zuò )法:春笋切成片后加少许盐(yán )捞出后用清水浸泡,生姜(jiāng )切片,葱切成段。锅烧(shāo )热(rè ),倒入(rù )2勺油,放入生姜、春(chūn )笋、牛肉片(piàn )、葱段翻炒1分钟左右。再加入生抽、老抽、蚝油翻炒(chǎo )均匀,加入少量清(qīng )水半掩住春笋(sǔn ),盖上(shàng )锅(guō )盖大火煮(zhǔ )开后转中火。煮到水快熬干的(de )时候加入盐,翻炒均匀稍收汁时盖上锅盖(gài )焖。 -
