做法:洗(xǐ )净宰好鲫鱼,洗净淮山和薏米。用清水(shuǐ )把陈皮泡软(ruǎn ),拍裂(liè )一小块姜,热锅,用姜块在锅(guō )上(shàng )擦一遍,放两勺(sháo )油,待油六成热下鱼,煎至微黄。煮沸瓦煲里(lǐ )的清水(shuǐ ),放入(rù )煎煮好的鲫鱼和其他材料,武(wǔ )火煮沸,转(zhuǎn )中小火煲一个(gè )半(bàn )小时(shí ),下盐调味即可品尝(cháng )。 -
