做(zuò )法:洗(xǐ )净宰好鲫鱼,洗净淮山和薏(yì )米。用清水把陈皮泡(pào )软,拍裂一小块姜,热锅,用(yòng )姜块在锅上(shàng )擦(cā )一遍,放两(liǎng )勺油,待油六成热下(xià )鱼,煎(jiān )至微黄。煮沸瓦(wǎ )煲里的清水,放入(rù )煎煮好的鲫(jì )鱼和其他材(cái )料,武火煮沸,转(zhuǎn )中(zhōng )小火煲一个半小(xiǎo )时,下盐调味即可品尝。 -
