做法:春(chūn )笋切成片后加少许盐(yán )捞出后用清水浸泡,生姜切片(piàn ),葱(cōng )切(qiē )成段。锅烧热,倒入2勺油,放入生姜、春笋、牛(niú )肉片、葱(cōng )段翻炒1分钟左右。再加入生抽(chōu )、老抽、蚝油翻炒(chǎo )均匀,加入少(shǎo )量清水(shuǐ )半(bàn )掩住春(chūn )笋,盖上锅盖大火煮开后转中(zhōng )火。煮到水快(kuài )熬干的时候(hòu )加入盐(yán ),翻炒均匀稍收汁时盖上(shàng )锅盖焖。 -
